Hugh Johnson and the Tuscan Cinta Senese pig

Hugh has been shooting in Tuscany with chef Aurelio Barattini for a new book written by author Nick Farrell. Together they will tell the story of a Tuscan trattoria and the local farms that provide its produce. One of these is the rare breed Cinta Senese pig which dates back to the 13th century. Rendered nearly extinct in the 1970’s its survival has been achieved by the enthusiasm of a few local breeders supported and encouraged by ristorante and trattorias keen to offer its sweet, marbled meat.
